Handling and transit conditions of white asparagus shipped by refrigerated trucks from Greece to Germany.

During the spring of 1992, white asparagus spears were transported in 4 refrigerated trucks from Galatades in Greece to Munich in Germany. Most of the total 174-h transit period from harvest to the retail outlets in Munich was spent in handling/packing operations (61.3 h) and transport (38.9 h). The produce stayed at the wholesale market for 37.3 h until its distribution to the retail outlets. The average spear temperature was 16 deg C during handling by the grower and 1-2 deg after precooling. The transit temperature inside the trucks ranged between 3.1 and 8.8 deg ; significant variations in temperature were found in 3 positions inside each truck. The relative humidity during transportation was near the saturation point. Considerable carbon dioxide accumulation and oxygen depletion were found in the atmosphere surrounding the produce during transportation.
