The amount of total, soluble and insoluble structural polysaccharides increased in cv. Italia grapes during harvesting and then remained constant whereas the pectin and KOH-soluble (4 M) hemicellulose content decreased during harvesting and subsequent cold storage. Pectin quality also changed with an increase in pectin methylation and a decrease in protopectins. Gel chromatography of pectins and hemicellulase extracted at harvest and after cold storage showed a decrease in high-MW polymers and an increase in low-MW ones. At the same time, the amounts of arabinose, galactose and uronic acid in the structural polysaccharides decreased while xylose and glucose increased.
