Recently India has emerged as an important tropical fruit producer, ranking second after Brazil and producing about 32.8 Mt of fruit. However, India's performance in world trade is poor and the quantity of fruits used by the processing industries is insignificant. This paper deals with the different aspects of processing and export of fruits with special reference to tropical fruits. The promotion and sustainability of the production potential of fruit depends largely on efficient postharvest management. Proper postharvest handling of fruit will lead to (i) more availability, (ii) benefits for farmers and consumers, (iii) better nutrition, (iv) more raw material for industry (v) higher employment opportunities, (vi) increases in exports, (vii) a better environment and (viii) improvement in quality of life. The Government of India gave great importance to horticultural development during the 8th plan period by sanctioning Rs. 1000 corers. Therefore, it is necessary to lay greater emphasis on an i
ntegrated approach to postharvest processing and export of tropical fruits.
