The pros (speed and simplicity) and cons (destructiveness and lack of accuracy) of the penetrometer firmness tester as a method to determine fruit/vegetable quality and maturity at harvest and in storage are discussed and a number of more recent alternative methods including acoustic response and non-destructive micro-indentation systems are overviewed. Information on new improvements to the Massey twist tester is also included.
