Fruits of the bruising-susceptible apple cultivar Aroma at 3 maturity levels were harvested over a 3-week period at weekly intervals and injured by mechanical impacts at 3 different levels shortly after harvest. Bruising damage was measured as average diameter of the bruises and by judging the degree of browning. The results are presented and discussed in relation to fruit development at harvest. Mean diameter of the bruises decreased with delayed harvest and with increased maturity at each harvest time. Browning increased with delayed harvest, but decreased with increasing degree of maturity at each harvest, a result for which no explanation is available.
