บทคัดย่อ
Calcium infiltration of cherry fruits increased calcium content. Calcium content was positively correlated with ascorbic acid content, but not soluble solids content. Calcium inhibited polyphenoloxidase [catechol oxidase] and peroxidase activities, decreased the percentage of rot by 38.3-100% and decreased browning by 13.38-45.23%.
