Fruits of apple cv. Jonagold from 1-, 2-, 3- and 4-year-old wood were harvested at commercial maturity and either analysed immediately or stored in ultra-low oxygen conditions (1.5% O2, 2% CO2) at 1 deg C for 106 days. At harvest, fruit K, P and Ca concentrations were normal and Mg concentration was high compared with known standards. K:Ca ratio in fruits from 1- and 2-year-old spurs was lower than in fruits from 3- and 4-year-old spurs, indicating a lower risk of storage problems. Decline in flesh firmness, acidity and sugar content during storage was more pronounced for fruits from older spurs.
