Simultaneous quantitation of acids and sugars as their TMS-silyl (oxime) derivatives by GC/MS: composition of six apple cultivars as a function of their harvesting and storage time.

Fruits of the apple cultivars Jonnee, Jonagold, Jonathan, Redspur, Gloster and Mutsu were harvested on 3 dates at weekly intervals and stored in air at 2 deg C for up to 7 months. Fruits were then analysed using a simultaneous acid/sugar quantitation procedure characterized by (i) performance in the presence of the fruit matrix, (ii) the elution and determination of the trimethyl silyl (TMS)/TMS-oxime derivatives of sugars and acids from one solution, by one injection, and (iii) application of gas chromatography with flame ionization detector (GC/FID) or GC/MS data evaluation. The procedure was used for the identification and quantification of the characteristic decomposition products of apple pectins (arabinose, galacturonic acid) and the determination of acids, polyalcohols and sugars present at widely differing concentrations. The results could be used to indicate optimum harvest date and storage conditions.
