Determination of the earliest possible picking date for the large orchards in the eastern part of Germany is of high practical significance, although the introduction of ULO (ultra-low oxygen) storage allows harvesting at a riper stage without storage problems. As well as accumulated temperature and starch degradation, the log Streif-index was confirmed as a useful device for predicting harvest date. Internal fruit quality of winter cultivars on the heavy soils of the hilly region south of Dresden, Saxony, at 200-300 m a.s.l., was higher in warmer years, whereas autumn cultivars such as Elstar had problems with premature senescence under these conditions. The high June temperatures in 1993 caused a shortening of the early harvest period and low fruit acidity and firmness. As in 1986, water core appeared in cultivars Gloster, Gala and Pilot in 1993. A formula using specific weight with a correction for fruit weight enabled good prediction of water core.
