Harvesting index of Comice pears by a multivariate method, and relation to post-storage quality.

Comice [Doyenne du Comice] pears were harvested on 3 dates in 1992 according to skin colour and were stored in a controlled atmosphere (3% O2, 3% CO2, -0.5 to 0 deg C). After 4, 5, 6 or 7 months of storage, fruits were ripened at 17 deg . Quality variables were measured at harvest, after storage and during ripening, and sensory evaluation was carried out when pears were ripe for eating. Fruits of the first harvest softened with a melting texture, but became quickly overripe; second harvest fruits remained greener and in good condition for longer during ripening; third harvest fruits were grainy and susceptible to decay. Principal component analysis was applied to correlation matrix and quality variables measured around the harvesting time. The use of the first principal component as a maturity index is discussed.
