Fruits of banana cv. Prata grown in Minas Gerais, Brazil, harvested 138 days after full bloom, were subjected to gamma -irradiation at 0.25 and 0.50 kGy from a source delivering 0.997 kGy/h and subsequently stored at 19 deg -20 deg C. Irradiation increased ethylene production and reduced CO2 production, measured over 20 days, but had no effect on normal colour development or starch degradation. Irradiation increased pectin solubilization. The highest increase in flesh:peel ratio was observed in fruits subjected to 0.25 kGy, possibly as a result of stress. A delay in soluble sugar accumulation was observed in colour grades 6 and 7 of irradiated fruits but shelf life was unaffected. Pectinmethylesterase activity was increased but polygalacturonase activity was suppressed in irradiated fruits.
