The behaviour of biological variation in batches of products is described. A model is presented which is based on a deterministic description of changes exhibited by individuals in a batch, in this case the development of red colour in tomato fruits during storage. The observed mean rate of change during postharvest storage and the dynamic behaviour of the standard deviation in a batch strongly depended on the type of statistical distribution and on the initial variation in the batch.
