A review is presented of the role of food processing, from preservation by individual households to provide food when other sources are scarce, to the level of large scale agroindustrial processing. Improvements in handling, storage and distribution can do much to reduce postharvest losses, and thus lower costs to participants in the food chain. Methods for achieving efficiency gains within the food sector are outlined focusing on policy reform, research, technology and infrastructure development.
