Relationship between senescence and active oxygen metabolism in apple fruits.

Changes in ethylene and active oxygen metabolism were determined in the apple cultivars Starkrimson and Red Fuji during storage at room temperature (23-25 deg C) or at 0 deg for up to 195 days. Fruit firmness and superoxide dismutase (SOD) and peroxidase (POD) activities decreased during storage at both temperatures. Lower temperatures inhibited the accumulation of MDA [malondialdehyde], delayed the appearance of the internal ethylene concentration peak and maintained a higher POD activity, thus delaying senescence. The effects of storage temperature on POD activity were different for the 2 cultivars.
