The physiological behaviour of fruits of 4 tomato cultivars (E11026, Caruso, BS-56 and Vision), stored at 12 deg C for 25 days, was studied. At each sampling date during the storage period, titratable acidity, soluble sugars, firmness, respiration rate and ethylene production were measured. The commercial acceptability of fruits was visually assessed. Caruso and BS-56 fruits showed the best storage potential (visual quality, titratable acidity and firmness). The decrease in respiration rate and the timing of maximum ethylene production can partly explain the differences in behaviour during storage.
