With the advent of recombinant DNA technology and advances in fruit molecular biology it has been possible to test the roles of various cell wall enzyme activities using transgenic plants. The latest work in this area is reviewed under the headings cell wall disassembly, cell wall hydrolases, cell wall biosynthesis and non-enzymatic deaggregation of pectin. It highlights the numerous wall modifications which can potentially occur during ripening and the need for further basic research to understand how these events regulate fruit softening.
