Brief background information is provided on the European market for modified atmosphere packed fresh prepared produce and some salient technical and commercial considerations are introduced. The main focus centres on the rationale behind and the potential applications for the use of novel gas mixtures (high O2, argon and nitrous oxide) for modified atmosphere packaging of fresh prepared produce.
