Asparagus is a highly perishable commodity because of its high rate of metabolism after harvest, with a respiration rate that may produce 27-136 mg CO2 kg-1 h-1. Maintaining desirable cosmetic and nutrient levels is difficult. The responsibilities of those involved in different stages of asparagus production (grower; buyer, broker, shipper; transportation/handling worker; retailer; consumer) in ensuring that postharvest losses are kept to a minimum are discussed.
