Concentration and composition of starch and polyuronide in 'La France' pear during maturation in relation to fruit softening after harvest.

During 3 successive seasons, La France pears were harvested at intervals of 7-16 days during the period 107-166 days after full bloom (DAFB), weighed and their flesh concentrations of starch and polyuronide measured. Fruits harvested about 165 DAFB (the commercial harvesting date) were ripened in a cabinet kept at 10 deg C for 4 weeks. Flesh firmness was measured at harvest and during postharvest ripening. The results indicated that concentrations and compositions of starch and polyuronide at 107-145 DAFB, in particular at 110-120 DAFB, could be used as an index for predicting softening of fruits after harvest.
