บทคัดย่อ
The distribution and occurrence of Aspergillus and Penicillium spp., and the conditions common to Asian storage parameters that favour their growth in rice and cereal grains are reviewed. The importance of correct identification at the species level and criteria for safe storage practice are also discussed. The production of aflatoxins, ochratoxins and sterigmatocystin by Aspergillus spp., and citreoviridin, citrinin, skyrins, islanditoxin and secalonic acid by Penicillium spp., and strategies to reduce mycotoxin contamination are considered.
