Temperature effects on bruise darkness of 'Granny Smith', 'Golden Delicious', and 'Jonathan' apples.

Bruise darkness of apple fruits (cultivars Granny Smith, Golden Delicious and Jonathan) was examined in relation to fruit temperature (fruits brought to 0, 10 or 20 deg C over a 48-h period) at time of injury, and following 4 days of storage at 0, 10 or 20 deg . The temperature of Golden Delicious fruits at bruising had no effect on bruise darkness but for the other cultivars, lower fruit temperatures were associated with darker, more obvious bruising. Darker bruises were also more likely to develop on apples which were stored at 0 deg than those stored at the higher temperatures.
