Changes in postharvest respiration and physiology were determined in Chinese olive (Canarium album) fruits treated with 1000 or 2000 ppm Ethrel [ethephon]. The results showed that Chinese olive fruits exhibited a respiratory climacteric, the climacteric rise in respiration could be advanced by Ethrel treatment. Peroxidase activity and the malondialdehyde content of lipid peroxidation products were increased by Ethrel treatment, as was cell membrane permeability. It was suggested that Ethrel treatment could weaken the protection of the cell membrane, promote lipid peroxidation, damage the integrity of cell membrane structure, and therefore, accelerate fruit ripening and senescence.
