Postharvest technology and utilization of almonds are discussed under 5 main areas: (1) Introduction, with discussions on the historical uses of almonds, nutritive value of almonds and world production; (2) Kernel analysis (lipids, proteins, carbohydrates, vitamins, minerals and cyanogenic glycosides); (3) Postharvest operations, including handling, drying, shelling, bleaching, storage and aflatoxins; (4) Utilization, including consumption of whole nuts, processed products (chopped or milled almonds, marzipan, almond paste, almond milk, almond butter, almond oil and essential oils), and byproducts (including furfural, fertilizers, charcoal, activated carbon, fuels, xylose and xylitol); and (5) Future prospects.
