An overview is presented of the effects of elevated CO2 (>5%) and reduced O2 (<5%) concentrations on causes of deterioration of horticultural perishables, covering the effects on various aspects of respiratory metabolism, ethylene biosynthesis and action, compositional changes, growth and development, physical injuries, transpiration, physiological disorders and pathological breakdown.
