บทคัดย่อ
The principles of magnetic resonance imaging (MRI) are described and applications of MRI involving fruits and vegetables, particularly studies on harvested commodities appearing after 1988 (when use of this technique in a postharvest context was first reported), are reviewed. Recent developments that employ nuclear magnetic resonance principles as online sensors in postharvest sorting and processing situations are outlined.
