Fennel is now widely grown throughout Italy, with 70% of the production in Puglia, Calabria, Campania, and Sicily. For production of about 25 t/ha, manpower requirements are about 500-600 h/ha, of which about 70% is in harvesting and packaging. The harvesting and packaging of fennel absorbs about 60% of the total cost of production. Production and export of the crop from 1984-1993 is illustrated graphically. The machinery available for transplanting and harvesting the crop is described and illustrated and a comparison between 3 levels of mechanized harvest presented. Trimming, selection, washing, and packing are the main postharvest operations; a facility has been designed for efficient postharvest treatment and its capacity is discussed.
