Pine nuts (pinones) from the Araucaria araucana tree, which grows in the Andes area of southern Chile, have a high moisture content (48%) and starch content (55% on dry basis) at harvest. The high moisture content makes them very susceptible to dehydration and fungal attack during storage under normal refrigerated conditions. Pine nuts collected in April were stored for 6 months under various controlled (CA) and modified atmosphere (MA) conditions; controls were stored in air (0 deg C, 65-85% RH). Moisture loss was high and there was a large increase in total sugars in the controls during storage. Storage in polyethylene bags (MA storage) lined with volcanic dust (ethylene absorber) at 0 deg , 65-85% RH, and CA storage (5% O2 + 10% CO2 or 5% O2 + 20% CO2, at 0 deg , 90% RH) gave the best results, maintaining quality for 6 months.
