Longan (cv. Shixia) fruits were stored in polyethylene bags (0.03 mm film) in modified atmospheres consisting of 1% O2 + 5% CO2, 3% O2 + 5% CO2, 10% O2 + 5% CO2 or air (21% O2) for 7 days at room temperature (about 25 deg C) or 35 days at 4 deg . Storage in a modified atmosphere (MA) consisting of 1% O2 + 5% CO2 or 3% O2 + 5% CO2 delayed browning of the peel by 2 days and one day at room temperature, respectively, and by 7 days and 5 days at 4 deg , respectively, inhibited fruit respiration, maintained total soluble solids and ascorbic acid levels in the fruits, and partially inhibited polyphenol oxidase [catechol oxidase] activity. MA consisting of 10% O2 + 5% CO2 was not as effective as the above treatments. Taste panel results indicated that the MA treatment consisting of 1% O2 + 5% CO2 produced slight off-flavours.
