Effect of sulfur dioxide on the respiration and the hormone levels of postharvest table grapes.

Using GC and HPLC methods, it was found that the level of ethylene released from cv. Thompson Seedless grapes was very low, but that the potential for ethylene release during cold storage was high, particularly for injured fruits. Fruit respiration is nonclimacteric but that of the pedicel and the stalk are climacteric, showing high respiration and ethylene peaks. SO2 treatments significantly inhibited the respiration rate, and reduced the abscisic acid content and the release of ethylene. However, SO2 increased IAA and GA, which themselves inhibited grape senescence and decreased grape abscission thus prolonging the storage life of the grapes.
