Effect of chitosan for maintaining freshness of fruits and vegetables and its mechanism of action.

The subject is reviewed with regard to the following: role of chitosan in maintaining freshness of fruits and vegetables, the depressive effective of chitosan on fungal pathogens and its mechanism of action, and the protective response induced in fruits and vegetables by chitosan. Oranges treated with chitosan solution can be kept store for 2 months under July-August temperatures without adverse effects on fruit appearance. The mechanism by which chitosan depresses fungal growth is not yet clear.
