A summary is presented of controlled atmosphere and modified atmosphere recommendations for storage of selected fresh-cut (minimally processed) fruits and vegetables. More detailed information with additional references is presented for beetroots (grated, cubed or peeled), broccoli florets, shredded cabbage, shredded Chinese cabbage, carrots (peeled, shredded, sliced or sticks), sliced leeks, chopped or shredded lettuce, sliced mushrooms, sliced or diced onions, diced peppers, whole peeled or sliced potatoes, cubed, shredded or peeled swedes, spinach, sliced tomatoes, sliced courgettes, sliced apples, cubed or sliced Cantaloupe and Honeydew melons, sliced kiwifruits, orange sections, sliced peaches, sliced pears, sliced persimmons, cubed pineapple, pomegranate arils, and sliced or topped strawberries.
