General concepts of perforation-mediated modified atmosphere packaging (MAP) of fruits and vegetables are presented and gas exchange through a perforation is modelled in order to predict the evolution of O2 and CO2 concentrations inside a modified atmosphere package. The advantages of perforation-mediated systems as a means of atmosphere modification are discussed and limitations as well as future trends to overcome these problems are analysed.
