บทคัดย่อ

Modified atmosphere packaging of broccoli florets: effects of temperature and package types.

Broccoli florets washed with 200 ppm NaOCl were held at 0, 5, 10 or 15 deg C in several sealed Cryovac films (PD941, PD955, PD961EZ and B900) capable of producing modified atmospheres, and compared with controls in perforated polyethylene film bags. Cryovac PD941 was the most effective film among those tested, with broccoli retaining excellent quality for at least 4 weeks at 0 deg . Films B900 and PD961EZ were not sufficiently permeable to compensate for the respiration rates of broccoli and severe off-aromas were apparent, especially at higher temperatures.
