Effect of modified atmosphere packaging conditions on storage quality of zucchini.

A variety of atmospheres were established inside packages made from plastic films of different permeabilities, and their effects on the keeping quality of zucchini [courgettes] (Cucurbita pepo) were assessed. The fruits were individually wrapped and stored at 10 deg C and 85% RH for 40 days. The packaging materials studied included low density polyethylene, perforated polyolefin, microperforated polypropylene, cast polypropylene, polyolefin and polyvinyl chloride films. Packages of low density polyethylene produced an atmosphere of 2-7% O2 and 5-8% CO2 which was beneficial for ascorbic acid retention and visual quality and helped reduce moisture loss. Individual wrapping with polyvinyl chloride gave similar quality retention with some weight loss.
