Controlled atmosphere effects on chlorophylls and carotenoids changes in green beans (Phaseolus vulgaris L., cv. Perona).

Green bean pods (cv. Perona) were stored for up to 22 days at 8 deg C and 98% RH in air or in a controlled atmosphere (5% O2 + 3% CO2, 3% O2 + 3% CO2 or 1% O2 + 3% CO2) and then transferred to 20 deg . Pods stored in air at 8 deg retained good visual quality for 18 days' storage. Storage in 1% O2 + 3% CO2 extended the storage life to 22 days and resulted in the best maintenance of pigment content and visual score. Data are provided on changes in chlorophyll and carotenoid content during storage.
