High CO2-low temperature interaction on ribulose 1,5-biphosphate carboxylase and polygalacturonase protein levels in cherimoya fruit.

Pretreatment with 20% CO2 + 20% O2 for 3 days prior to storage in air at 6 deg C for 23 days maintained flesh firmness in cherimoya fruits and suppressed the rise in the immunodetected polygalacturonase protein content. The immunodetected levels of ribulose 1,5-biphosphate carboxylase protein and total chlorophyll content were higher in CO2-treated fruits than in fruits stored in air. The pretreatment improved retention of the characteristic yellow-green colour of cherimoya fruits during cold storage.
