บทคัดย่อ
The respiration rate of bananas was determined as a function of O2, CO2 and temperature using a closed system. Temperature dependence of the respiration rate constants followed the Arrhenius-type relationship. Polyethylene film permeabilities were measured at various temperatures. The Arrhenius equation was used to describe the permeation of O2 and CO2 through polymer films. A mathematical model which could be used to describe the dynamic changes of O2 and CO2 gas compositions inside modified-atmosphere packages of fresh bananas at different temperatures was proposed and its solution was obtained numerically.
