Modified/controlled atmospheres for bananas and plantains (Musa spp).

Research on modified atmosphere (MA) and controlled atmosphere (CA) storage of bananas and plantains is reviewed. The optimum atmosphere composition for bananas is 2-5% O2 and 2-5% CO2. These atmospheres delay ripening without causing any deleterious effects, although recent research has suggested that bananas which have ripened under CA conditions are lower in quality in terms of visual appearance than bananas ripened in air. MA, sometimes in combination with ethylene-absorbing agents, is commonly used during long-distance sea transport. Low pressure (LP) storage can also maintain fruits for a longer period in very acceptable quality. Due to the availability of fruit almost all-year-round and because of cost considerations, CA is not commonly used and LP is not commercially used. There is potential for use of CA on marine ships.
