Litchi cv. Dehradun fruits, harvested at maturity, were wrapped in perforated polyethylene bags, packed in wooden boxes and stored at 0-2 deg C and 85-90% RH for up to 30 days. Total soluble solids, reducing sugars, non-reducing sugars and total sugars increased up to 10 days of storage and thereafter declined. In contrast, titratable acidity and ascorbic acid contents followed a linear declining trend throughout the storage period. The results indicate that litchis can be stored for 10 days under these conditions before they start to deteriorate.
