Effect of microorganisms on the quality of drinking coffee.

The effects of coffee production regions in Brazil on the occurrence of microorganisms affecting the quality of coffee, pathogenic fungi and yeasts responsible for the damage to coffee and their control before harvest, at harvest and during transportation, processing of coffee beans and in storage are outlined.
