Unripe Clara Frijs pear fruits were harvested in September in Denmark and packed in Cryovac MR film prior to subsequent storage at 20 deg C for 10 days. Control fruits were packed in unsealed bags while modified atmosphere (MA) samples were packed in sealed bags with either 0 or 8 pinholes. Equilibrium atmospheres were reached after 2 days of storage with average contents of 3.1% O2 and 10.7% CO2 in the 0-hole bag and 7.2% O2 and 12.2% CO2 in the 8-hole bag. Fruits in the 0-hole bag retained colour and firmness during storage, while fruits in the 8-hole bag only retained their colour. Fruits in the 0-hole bag showed increased production of ethyl acetate and ethanol. The total volatile concentration (without ethyl acetate and ethanol) showed overall aroma production to be lower for MA-packed fruits compared with controls. The flavour and eating quality of the MA-packed fruits did not improve compared with the control during storage, and the applied MR bag is concluded not to be the optimum bag fo
