Ultra-low oxygen storage of 'Golden Delicious' apples.

Golden Delicious apples were harvested at commercial maturity on 6 October 1994 in Val di Non Valley (600 m a.s.l.), Italy, and stored in commercial storage rooms at 1 deg C (97% RH) in controlled atmosphere (CA) storage (1.5% O2, 2.0% CO2) or in ultra-low oxygen (ULO) storage (0.9% O2, 1.2% CO2) for 7 months. The fruits were analysed for flesh firmness, colour, titratable acidity, soluble solids, sugars and organic acids contents, and ethylene and volatile composition at harvest, at the end of storage and during ripening at 20 deg . At the end of the storage period, ULO-stored fruits were less ripe than CA-stored fruits; total volatiles and volatile composition were similar in CA-stored and ULO-stored fruits. During post-storage ripening, ULO-stored fruits produced more total volatiles than CA-stored fruits. ULO storage delayed maximum ethylene and volatile production, as well as the development of selected volatiles. At tasting, ULO-stored fruits were firmer, juicier and more sour than CA-stor
