Improvement of quality of Elstar apples by dynamic control of ULO conditions.

Optimally harvested and late-harvested Elstar apple fruits from 4 orchards were placed in 600-litre containers and stored from mid-September 1996 to mid-April 1997 under recommended ultra low oxygen (ULO) conditions (1.2% O2 + 2.5% CO2 at 1-2 deg C) or in dynamic control system (DCS) containers. The O2 content was brought down quickly to 1.2% O2 within one day. Further lowering of the O2 content in the DCS containers was done incrementally at 0.2% every 2 days until ethanol appeared in the headspace. After ethanol appeared, O2 was adjusted to maintain ethanol below 1 ppm in the headspace. Samples of the stored fruits were removed after various storage times and the fruits were analysed for firmness, colour, taste, and development of disorders and decay. The assessments were performed directly after storage and after an additional period of 7 days at 1-2 deg plus 10 days at 18 deg . DCS-stored fruits showed better quality retention than ULO-stored fruits. The results are discussed in relation to

the possibilities of the development of a DCS system, which operates by providing feedback of early signs of fermentation (ethanol) in the ambient air and is followed by O2 injection.
