Pre-harvest cracking or splitting is a problem in many commercial crop cultivars. In the past 6 decades, a number of techniques for measuring the susceptibility of crops have been reported. These techniques can be broadly classified into (i) direct methods which induce and propagate cracking by immersion in water (with or without vacuum infiltration) or following mechanical perturbation, and (ii) indirect methods based on the determination of some mechanical properties of the skin or flesh which correlate well with the incidence of field cracking. To date, the various techniques used are destructive and suitable for testing mature crops. This review examines the techniques used to measure susceptibility to cracking in fruits and vegetables, and highlights the need for further research in this area. Recent advances in nondestructive testing of food materials provide new opportunities for application in this area.
