บทคัดย่อ

Technology of growing and utilization of Jerusalem artichokes.

The cropping and utilization of Jerusalem artichokes are described in relation to the Czech Republic. Both annual and perennial cropping are shown to be possible, with mechanized tuber harvesting. Postharvest tuber storage and tuber use for food purposes, especially for diabetics, is reviewed. Methods of processing the tubers and the economics of diabetic sweetener production from Jerusalem artichokes compared with synthetic production are presented. The use of Jerusalem artichoke as a crop in organic farming and in marginal areas is discussed.
