Fruits from the second harvest of the apple cv. Elstar were coated with fish meal (1% solution), starch solution (0.25-2.0%), wax or DPA [diphenylamine] (0.25-2.0%) before storage in ULO [ultra-low oxygen] until early March, and after holding [time not specified] the occurrence of skin flecks and CO2 damage were assessed in a trial at the Proefstation voor de Fruitteelt, Wilhelminadorp, Netherlands, in 1996. Skin flecks were almost eliminated by fish meal as well as starch solution at 2%, but CO2 damage rose from 0 to a maximum of 83%. DPA at 1 or 2% reduced the occurrence of skin flecks without causing CO2 damage. The relationship between fruit quality characteristics, especially colour, at harvest and the occurrence of skin flecks is discussed, and a forecasting system is proposed based on fruit mineral analysis and sugar and acid contents.
