Kiwifruit cv. Hayward flesh softening, the conversion of starch to sugars, and soluble solids content accumulation in response to temperature and exogenous postharvest ethylene applications were studied for 3 seasons. The result of this research was a ripening protocol (ethylene applied at 100 ppm for 6-12 h to cold fruits using the 'shot' or 'flow-through' systems) for pre-conditioning kiwifruits prior to shipment, triggering the ripening process, which then continues during storage/transit, allowing the Californian kiwifruit industry to deliver ready-to-eat fruits early in the Californian season (September-December).
