Onion is an important vegetable crop in India, with a large amount of dehydrated onion flakes and powder being exported. The postharvest losses in onion can be as high as 40-50% encompassing losses due to weight loss, sprouting and rotting, etc. Postharvest practices for onion being followed by farmers in Gujarat, India, are described. The dehydration process is also presented with a flow chart and a description of the machines used. The temperature of hot air used to dehydrate onions is 50-60 deg C during the final stage; this governs the quality of the dehydrated product.
