Two possible explanations for the relationship between increased fermentation and tissue disorders during controlled atmosphere or modified atmosphere storage, viz. (1) a toxic effect of fermentative metabolites and (2) insufficient energy production to cover energy demands, are described and the physiological relevance and implications for storage are discussed.
