บทคัดย่อ

Dynamical description analysis of the firmness of apples for different commercial varieties, on and off the tree.

The acoustic impulse response was used as a non-destructive method for measuring changes in firmness in fruits of 5 apple cultivars (ranging from early maturing to late maturing) on and off the tree (after harvest the fruits were held for 4 weeks at 18 deg C and 65% RH). Firmness was lowest throughout the season in the early maturing cultivar Summerred (on and off the tree). Firmness on the tree was highest in fruits of the late maturing cultivar Braeburn, but off the tree, firmness retention was similar to fruits of the mid-season cultivar Elstar and the mid-late cultivars Jonagold and Gloster. It is suggested that a better understanding of these differences between cultivars would improve quality assessment.
